Dr Adcock's research encompasses three broad areas of lipid research:
1. The investigation of lipid oxidation in food systems
2. Enzymatic synthesis and complete characterization of lipid mediators of inflammation
3. Comprehensive two-dimensional gas chromatography for lipidomics and biomarker discovery
