TEACHING EXPERTISE

Katie has extensive teaching experience across undergraduate and postgraduate nutrition programs, with leadership roles including Unit Chair, Campus Chair and Course Director. Her teaching experience spans foundational nutrition, nutritional physiology, lifespan nutrition and diet and disease. One of her most rewarding teaching experiences was leading the HSN360/HSN760 International Perspectives in Food and Nutrition study tour to the United States of America in 2014.

 

As Course Director, Katie focused on enhancing the first-year student experience and supporting graduate employability. She established and led a community of practice for Unit Chairs teaching first-year units in food and nutrition, with the group's efforts recognised through the School's Team of the Year Award: Together Everyone Achieves More in 2022. Katie also led the scaffolding of career education and employability skills development across the Bachelor of Nutrition Science suite of courses, including strengthening the visibility of connections between the curriculum and careers in food, nutrition and dietetics.

 

Katie contributes to the Scholarship of Teaching and Learning through collaborations with colleagues across multiple Australian universities. In partnership with academics from four other institutions, she conducted research exploring curriculum strategies for embedding employability skills development within tertiary nutrition education in Australia, with findings published in the Proceedings of the Nutrition Society.

 

She has supervised research students from several courses across a diverse range of nutrition topics, including eating behaviours, diet quality, energy density, ultra-processed foods and sustainable diets.
