BIO

Professor Russell Keast is a Lecturer in the area of Food and Sensory Sciences in the
School of Exercise and Nutrition Sciences. He teaches at undergraduate and
postgraduate level and also supervises higher degree students. Professor Keast
leads the CASS Food Research Centre and is an active
researcher in sensory science, with particular emphasis on taste and how taste
may influence food choice and diet. In addition, Professor Keast is a
qualified chef and he collaborates with food industry investigating the
flavour of foods.
