RESEARCH INTERESTS

Dr Lavaraj Devkota’s research examines the structure–function–nutrition–health relationships of food macromolecules within plant-based systems. His work spans multiple levels of structural hierarchy, from whole grains and seed matrices to individual starch, fibre, protein and polyphenol molecules.

He investigates how conventional and emerging processing technologies (PEF, Ultrasound) influence structural organisation, ingredient functionality, digestibility, and nutritional performance. His research includes plant protein characterisation, the functional properties of starch and dietary fibre, and the role of fibre and polyphenols in gut health and digestive enzyme inhibition.

Dr Devkota is particularly interested in translating mechanistic insights into practical applications, including the development of meat and dairy alternative systems and other sustainable plant-based foods.
