BIO

Dr Dan Dias is a Senior Lecturer in Analytical Chemistry at the Deakin Centre for Advanced Food Sciences (DeCAF), School of Exercise and Nutrition Sciences, Deakin University (Melbourne, Australia). His research interests and expertise lie in analytical chemistry, gas chromatography–mass spectrometry (GC–MS), natural product chemistry, food science, and flavour chemistry to address industry-relevant challenges across the food and health sectors.

     With more than 15 years of experience spanning industry and academia, his current research translates analytical innovation into practical solutions that improve food quality, enhance product development, and advance health outcomes.  Recently, in collaboration with The Product Makers and Human Health and Wellbeing, he led a fully remote, quadruple-blinded, randomised, placebo-controlled crossover clinical trial investigating the health effects of polyphenol-rich sugarcane extracts (PRSEs).

     As Head of the Flavour Chemistry Group, Dr Dias leads a state-of-the-art laboratory equipped with advanced GC–MS instrumentation for volatile analysis, flavour profiling, and chemical fingerprinting, supporting both fundamental research and industry innovation.

     Dr Dias is also a dedicated educator, teaching food chemistry at undergraduate and postgraduate levels. He is committed to developing graduates with strong analytical and practical skills, preparing the next generation of food scientists and analytical chemists for careers in academia and industry.
