RESEARCH INTERESTS

Dr Dias has supervised multiple PhD candidates as both Principal and Associate Supervisor across multidisciplinary research areas spanning bioactive natural products, food microbiology, analytical chemistry, and food science. His research is strongly industry-focused, with projects investigating the effects of food processing and storage on flavour, the application of algae-derived natural products to control microbial spoilage, and the authentication of sugarcane and related products.

 

His broader research program also explores bioactive compounds from Australian bryophytes for food safety and preservation, evaluates the suitability of post-consumer recycled plastics as food contact materials, and applies metabolomics to predict ultra-high-temperature (UHT) milk quality. Additional research focuses on flavour optimisation of UHT dairy and plant-based beverages and the development of near real-time analytical methods for detecting microbial contamination in food systems.
